Last year, I finally overcame my hesitation and committed to building a stronger sourdough starter — and I’m so glad I did. What once felt intimidating has become a true staple in our home, bringing slow mornings, cozy bakes, and a lot of joy into our kitchen. “Making the bread of my dreams.”

If sourdough feels a little scary to you, I want to encourage you: it’s not nearly as complicated as it seems. It’s hands-on, forgiving, incredibly fun, and most importantly… delicious.

Below you’ll find the simple feeding steps I use to keep Starlight Starter active and happy. I’ll also be sharing some of my favorite sourdough recipes soon, so stay tuned — there’s plenty more baking goodness to come.

When I’m keeping my starter active, I use a simple two-Weck-jar method:

• 30g active starter
• 125g filtered water
• 140g bread flour

I move 30g of starter into a clean jar, add the water and flour, mix well, and let it do its thing. Using two jars keeps things clean and easy, and the ratios have been working beautifully for me.
